As promised we wanted to provide a healthier version of Sweet Potato Casserole for those individuals interested in an alternative for the upcoming Thanksgiving Holiday. This is sure to be a HIT for the entire family.... and nobody needs to know it doesn't have a TON of butter..... shhhhhhhhhh!!!!!!!
Ingredients:
4 - Medium Sized Sweet Potatoes
1/2 cup of chopped Walnuts
2-3 tablespoons of Rosemary
4 teaspoons or packets Stevia in the Raw (or any artificial sweetener of your choice)
1 teaspoon of Cayenne
1 teaspoon of maple extract
Spray Oil
After cleaning the sweet potatoes, prick and roast in the oven at 375 degrees for for 8 mins and turn on the other side and roast for an additional 8 mins. Once they are done let sit to cool and peel. Mash or mix sweet potatoes and combine with artificial sweetener, maple extract, and cayenne seasoning. Put mixture in casserole dish and spread walnuts on top
along with the rosemary and spray with spray oil. Bake for 5 mins so walnuts and rosemary are toasted and ENJOY!!!!!!
Additional Option:
If you would like to be in more of the holiday spirit use Pecans instead of Walnuts. OR for a little New Mexican flare - add some piñon nuts. If you want to be a little more naughty.... add some marshmallows :)
