We are happy to offer this AMAZING and APPROVED King of Kings Superior Nutrition recipe!!!! With some thinking outside of the box and some desire to turn non-approved recipes into approved ones - this is a summer favorite for me and I had fun creating it and enjoying it!!!!! I am happy to share this fresh summer option with our KOK Family..... ENJOY!!!!!

Ingredients:
1 lb. Fresh Tilapia
1 Red Bell Pepper
1 Orange Bell Pepper
1 Cucumber
1/2 White Onion
1 Jalapeno
8-10 Limes
Cilantro
This is a two part recipe. First cube raw Tilapia into small chunks and marinate in lime juice. You will use 7-8 large limes for this process (make sure top of fish is covered with the fresh lime juice - you might have to add additional limes depending on size). Marination should take place for at least 5-7 hours to ensure the raw fish is fully cooked from the acidity of the lime juice. I suggest to periodically stir the fish throughout this process. Once you have the raw fish cooking in the lime juice start the Raw Vegetable Slaw.
Raw Vegetable Slaw:
1 Red Bell Pepper
1 Orange Bell Pepper
1 Cucumber
1/2 White Onion
1 Jalapeno
2 Limes
2 Tablespoons Minced Cilantro

Finely Chop all ingredients and combine together. Add juice of two fresh limes to raw vegetables and let them marinate together. This recipe is to be measured out so we stay precise with our serving sizes.
Once the marination process is completed for the Tilapia submerged in lime juice you will measure out your serving size of fish in your bowl and add your 4 ounces of the Raw Vegetable Slaw to make your meal. If you have avocado on your meal plan you can measure out your approved serving size accordingly. To take this a step further you can serve on toasted corn tortillas or you can make your own tortilla chips (recipe is on previous blogs posts under Tomatillo Salsa and Taco Salad).
Helpful Hint -This Raw Vegetable Slaw is a great option for fish tacos, salads and you can add this to your tuna wraps. A fresh option to keep prepped and readily available in your refrigerator.
