Happy Friday my King of King Peeps - I know some of us are missing that Good Ole' New Mexican Comfort food, myself included! Here is my healthier "King of Kings Approved" version of Green Chile Chicken Stew! As promised this is sure to make your Heart "Contento" :)
Green Chile Chicken Stew
2-3 Chicken Breasts
1 Packet of Herb Ox Sodium Free Chicken Bouillon
1-2 Garlic Cloves
1/4 cup white onion (finely minced)
1 serving of cheese (sliced or shredded depending on your meal plan)
Cooked Vegetables (green chile can be an added option to this)
Boil your chicken with your packet of bouillon and add garlic and onion. Once this is cooked put it to the side as you are going to use this broth for the finished product. As cooked items are available we are going to build our green chile stew ingredient by ingredient. Remember what keeps us successful in our macro nutrient plans is serving sizes (make sure to weigh and measure everything). This is a deconstructed stew that we will make with the process below.
QUICK 5 Step Process:
Shredded your chicken and add your serving size of chicken to your bowl.
Then add your allotted serving size of your cooked potatoes,
Add your veggies (green chile can add to this in your measuring)
Add your broth you can add 6-10 ounces of broth depending on your preference.
And last BUT NOT LEAST ---- Add your cheese! This is going to be your sliced or shredded cheese depending on what is reflected on your meal plan. Throw it in the microwave to melt the cheese and there you have it!!! YES!!!!!! #winning
