Greetings All! I have been working on this recipe to perfect it! It is super easy AND it will set you up for the entire week of meal prep! I hope you all enjoy it! Below you will find the recipe along with some variations that give you a little more variety to get creative and that will appeal to you most! It is sure to be a palate pleaser while offering some convenience for setting the week up for success! ENJOY!!!!!!
Hearty Meatloaf
2 lbs - 96% Lean Ground Beef (Ground Turkey or Chicken are alternative options)
1 Egg
1/2 cup of Egg Whites
1/2 Cup (40 grams) Oatmeal
1/2 Cup White Onion (chopped)
1/2 Cup Bell Pepper (chopped)
1/4 Cup (63 grams) No Salt Added Tomato Sauce
3 Garlic Cloves (minced)
2 Tablespoons No Salt Added Ketchup
1 Teaspoon - No Salt - Italian Seasoning (Optional)
1 Teaspoon - Salt Substitute
1 Teaspoon - Onion Powder (Optional)
2 Teaspoons of Worcestershire Sauce (low sodium)
4 Shakes of Liquid Smoke (use the flavor of your choice)
To Add Some Spice:
1/4 Cup Green Chile (chopped)
Add Red Pepper Flakes
Directions:
Preheat Oven to 350 Degrees. Mix Ground Meat, with Egg and Egg Whites along with dry spices (garlic, salt substitute, onion powder). Then Add Dry Oatmeal, Tomato Sauce, Worcestershire Sauce and Liquid Smoke. Mix all ingredients together and add chopped onion and bell peppers. Add Parchment Paper to your baking pan and add meat mixture in pan.
Bake for about 30 mins and remove from oven - then brush 2 Tablespoons of Ketchup on top of Meatloaf and put back in over for about another 35- 45 mins. Meatloaf should be cooked to an internal temperature of 160 Degrees via your thermometer. Once the meatloaf is done allow it to rest for 15 minutes before serving.
Substitutions:
Instead of using Oatmeal to bind the meatloaf, use your "Hint of Salt" Rtiz Crackers! Use a serving size of 7-10 and crumble them and use in lieu of the oatmeal.
Serving Ideas:
Serve with Red Potatoes (make whipped mashed potatoes)
Use Red Chile as Gravy for your meal
