Ingredients
1 cup Sweet Potato (can sub for Pumpkin Puree if desired)
½ cup Almond Butter (can sub for Peanut Butter, Cashew Butter or a Nut Butter alternative)
¼ cup Cocoa Powder
2 scoops Protein Powder
1 serving Liquid Stevia (about 15 drops)
Instructions
Preheat the oven to 350 F and line an 8x8 pan with parchment paper (or you can use a mini muffin tin with mini muffin liners, you will need 15). Spray with Pam and ensure parchment paper or mini muffin liners are greased generously.
In a high-speed blender or mixing bowl, combine all your ingredients and blend/mix until smooth.
Pour brownie mixture into pan (or into each muffin tin, filling until just full). There is no baking powder needed, they generally won’t rise.
Bake for 12-15 minutes, or until a skewer/toothpick comes out clean. Allow to cool in pan completely. Cut into 16 even pieces.
Helpful Tips:
For best results, refrigerate once cooled for several hours.
Brownie bites need to be kept refrigerated but taste amazing from the freezer as well
