Oatmeal Pancakes - Quick, Easy and Full of Flavor!!!

This recipe is super easy to make up and there is no clean up needed. You can eat these with syrup or you can make them and eat them on the go in the car. Another great thing about these pancakes are you can prep them in advance and have them readily available in the refrigerator or the freezer.


Oatmeal (quick oats or traditional oats)


Artificial Sweetener

Vanilla Extract


Optional: Lakanto Syrup and/or I Can't Believe It's Not Butter Spray


Measure your appropriate serving size of your oatmeal (typically 40 grams) into a bowl, add two eggs, 1/4 teaspoon of vanilla extract, 1/4 teaspoon of cinnamon and add 1 packet of artificial sweetener and mix. Let the mixture sit for a few minutes so the oats soften - then make one large pancake or two pancakes. Use your spray oil in the frying pan and cook. Add spray butter to your pancakes and add your serving of Lakanto Syrup. Also keep in mind these have enough flavor where you can eat them plain and on the go.

Additional Ideas:

  1. If you want to make these into "Protein Pancakes" replace your eggs with 1/2 cup of egg whites

  2. Use PB2 or PBFit (make it more of a sauce consistency) and use this as syrup alternative

  3. Add some diced apple for flavor

  4. For added protein you can add a scoop of protein powder or vital collagen
