I just started pickling my onions and they have started making a routine appearance on ALL of my meals! They add SOOOO much flavor and have an AWESOME crunch!!!!Add them to your avocado toast, tacos, chilaquiles, steak or even your fresh salads!
PICKLED ONIONS
Ingredients:
1 Large Red Onion (thinly sliced)
3/4 Cup Apple Cider Vinegar or White Vinegar
1/4 Cup Water
1 Tablespoon of "No Salt" or Salt Substitute
2 packets of Artificial Sweetener
1/2 Fresh Squeezed Lemon (optional)
Add-Ons if Desired:
Whole Peppercorns
Whole Garlic Cloves
Added Non Salt Seasonings
Red Pepper Flakes
Jalapeños or Habaneros
Fresh herbs or spices
Directions:
Combine your vinegar, water, salt substitute and artificial sweetener (add your lemon if you decided to use it) to a pan and and once it starts to simmer remove from the heat. Add your thinly sliced onions to your pickling jar and add any additional items from the "add-ons" as desired. Then pour your liquid in the jar until onions are covered. Let them sit for about 20-30 mins to cool before putting in the refrigerator. They will last about 3-4 weeks.
Helpful Tip:
If you would like to take away some of the strong onion flavor blanch your onions prior to pickling them. Bring 2-3 cups of water to a boil and have sliced onions in the sink in strainer. Pour boiling water over the onions for a quick blanch and let them sit for about 5 minutes before adding them to your pickling jar.
