With the Sunday Game Day around the corner we wanted to provide you some shareable healthy options. It is likely you may be invited to a potluck on Sunday for some the football festivities - here are some options you can take and still participate in the fun with a healthier version of the "GOOD STUFF" without getting completely off your meal plan! Show your friends and family a healthier version is still a good version and probably even tastes better!!!
FRITO PIE / NACHOS (Texas Style Chili)
Ingredients:
16 oz - 19 oz Package Ground Turkey
1 Can of Black Beans (no salt added)
1 Can of Pinto Beans (no salt added)
1 Can of Red or Kidney Beans (no salt added)
1 Can of Diced Tomatoes (no salt added)
1 Red Onion
2-3 Jalapeños
Shredded Cheese
Sour Cream
Cilantro
Lightly Salted Fritos (28 grams or 34 chips) or Leal's Seasoned Tortilla Chips (28 grams or 10 chips)
In Frying pan sauté diced jalapeños, 1/2 diced red onion and ground turkey. Once everything is browned add all cans of beans and diced tomatoes (keeping all juices in). Let this simmer for about 10-15 minutes and add chopped cilantro (1/4 cup). When chili is ready serve over Fritos, Tortillas Chips or separately in a Bowl. Add shredded cheese, sour cream and raw diced onions to taste... ENJOY!!!! This has been one of my favorite healthy "Texas Chili" versions for Frito Pie for many years. Since this is potluck style you can cook everything together for special occasions like this. We will not have the appropriate serving sizes of your items, but this is a healthy version and offers more balance of life.
Additional Option: You can make fresh Red Chile on the side or you can add Red Chile Powder to your "Texas Chili" to give it that New Mexican Flare.
QUESADILLAS (protein is optional)
Ingredients:
Protein of your choice (Steak, Ground Beef, Ground Turkey or Chicken)
Shredded Cheese
Green Chile
Carb Chopper Tortillas
Herdez Avocado Hot Sauce (as seen on previous blog posting)
Make your quesadillas :). No explanation needed lol!
Additional Option: You can make a side of guacamole, use sour cream or a healthy salsa to garnish or for dipping.
BLACK BEAN DIP
Ingredients:
1 Can Black Beans (no salt added) --- Pinto Beans are an option as well
2 Garlic Gloves
1/4 Teaspoon Cumin
1/4 Teaspoon Onion Powder
Chopped Cilantro (to taste)
1/2 lime (juice only)
1/4 Cup Sour Cream
Option for Spice - Use jalapeños or fresh green chile
Combine all ingredients in small food processor. Once blended add 1/4 cup of warm water to create a puree. You can either serve cold or warm in pan to serve hot.
Additional Option: Serving option... add shredded cheese, sour cream and chopped cilantro when serving.
