Sweet potatoes are definitely an item that is under utilized and we believe mainly because people are not aware of the many ways you can cook them. This goes back to one of our very first blog posts "Perception is Everything." We challenge you to add Sweet Potatoes to your meal plan and give these options a try! Below you will find we have done Sweet Potatoes Three Ways:
French Fries
Mashed Sweet Potatoes (more of a sweet treat)
Silver Dollar Rounds
Sweet Potato French Fries
Microwave Sweet Potatoes in water for 2-3 minutes to soften (peel if desired)
Chop Sweet Potatoes into your desired shape of fries
Toss chopped fries in spray oil and/or "I Can't Believe It's Not Butter"
Season with Garlic Powder (or any desired dry salt-free spice(s) of your choice)
Cook in Air Fryer for 25-35 minutes
Sweet Potato Mash
Microwave Sweet Potatoes in water for 10 minutes OR boil them on the Stove Top
Once you have your desired consistency - mash to your desired thickness
Add "I Can't Believe It's Not Butter"
Add Cinnamon
Add Stevia in the Raw (or any artificial sweetener of your choice)
***Bonus Option: You can also add Almond Butter or Peanut Butter (meal plan permitting)
Rosemary Silver Dollar Rounds
Chop Sweet Potatoes into 1/2 inch thick silver dollars
Spray both sides with spray oil and/or "I Can't Believe It's Not Butter"
Add Garlic Powder
Add Rosemary
Cook in Air Fryer for 20-25 minutes
