With that said... Do tacos make your heart happy??? If the answer is YES then you will appreciate this post! With my recent obsession with "The Taco Chronicles" on Netflix (yes I binged watched it and I may or may not have a trip planned in the future to experience some of these authentic tacos joints) I needed Tacos and I needed them now! I knew there had to be an alternative way to create a flavorful and most importantly a "King of Kings" approved version of this tasty goodness without feeling deprived. I decided to experiment with The Asada Taco, the next time Beef was an option for me to select for my dinner on my meal plan it was going to go down! I started with some basic ingredients that were fresh and healthy and I went on from there. The marinade was a success and I decided to cook my meat on the grill! If you read my first blog post "Perception is Everything" you know I had to make this visually replicate the experience as if I was at a Taco Truck in my own kitchen!
We will start with the Marinade...
Asada Street Taco Marinade:
1.5 - 2.5 lbs of lean beef thinly sliced (cut of your choice)
2-3 sliced jalapenos
3-4 fresh garlic cloves (minced)
¼ white onion (thinly sliced)
½ cup white vinegar
Combine all ingredients in a bowl and add the beef. Once everything is mixed together - move your meat in a container where you can layer the meat and marinade. Marinate for 2-4 hours before cooking.
Additional Tip: Add a Chipotle / Red Chile Seasoning for an added smoky flavor and a higher level of heat.
Now to put these bad boys together!!!! Serve with the following items - keep in mind ALL items below might NOT be included in your meal plan! Make sure to double check.
Corn Tortillas
Chopped White Onion
Chopped Cilantro (use in moderation)
Sliced Lime Wedges
Avocado
Grilled / Cooked Bell Pepper
