This recipe idea is EXTREMELY easy and versatile! Egg Salad also reminds me of my childhood, doesn't it bring back some memories of your grandma how she could make something out of nothing???? YES!!!! This can be used as a snack or if you are someone that does NOT eat tuna - you can always make this into a Sandwich! This is especially a great GO TO if you are on the GO!!!!! I will provide my main recipe and ALL of the other options you have add to give it a different twist! Get those creative juices FLOWING!!!!!
INGREDIENTS: (single serving)
2 Hard Boiled Eggs
2 Tablespoons of Plain Non-Fat Greek Yogurt
1 Tablespoon of Dijon Mustard (or any mustard of your choice)
1 Tablespoon of Chopped Celery
1 Tablespoon of Chopped Red Onion
1/2 Teaspoon of White Vinegar
Dash of paprika
Dash of pepper
Any fresh herbs you desire (chives, dill, cilantro or garlic)
OR
Any no salt seasoning you desire
Optional: For a little spice you can add jalapeño or fresh green chile
Combine ALL of the above ingredients together and there you have your Egg Salad! But that is not all! Below you have some options you can combine to make it your own!
FATS:
Avocado
Cheese
Up to 1 Serving of Miracle Whip (see product label for amount)
PROTEIN:
Add Can of Tuna (280 mg of sodium or less - the lower the sodium the better)
Add Shredded Chicken
Add Edamame
WHAT CAN WE WRAP IT IN OR ADD TO IT???? HMMMMMM.
Bread (one or two slices)
Wrap it in Lettuce
Cucumber Slices
Hint of Salt Ritz Crackers
Approved English Muffin
Low Carb Tortillas
Corn Tortillas
Red Potato (this will make an individual serving of potato salad) YUMMMMM!!!!!!
